Ingredients

  • 1 can drained chick peas
  • 1T peanut butter
  • 1tsp lemon or juice of one lemon
  • 1tsp salt
  • 1/2tsp pepper
  • 2T olive oil

Preparation

In food processor, puree until fairly smooth. Then dribble in 2 tablespoons olive oil. Add warm water with the processor on and until mixture is thick & silky smooth.

Deb Allan not only shared this recipe, but prepared this dish for the UIHC December 2016 Bariatric Surgery Support Group Meeting. She recommends consuming on apples or mini sweet peppers.

I was fascinated by the use of peanuts in the recipe instead of tahini, and wasn’t sure what to expect. It was an interesting substitution, and while the flavor of peanut was apparent, it was not overpowering. It seems like a good substitution for the traditional Tahini if you’re averse to buying a jar of something you don’t use regularly.

This recipe engendered a lot of discussion, as hummus seemed to be new to a number of people in attendance.
