Ingredients

  • 15oz can of pumpkin
  • 1C skim milk
  • 1 small box sugar free butterscotch pudding mix (4 serving size)
  • 1 tsp pumpkin pie spice
  • 8oz container sugar free Cool Whip

Preparation

Whip together pumpkin, milk, pudding mix, and pie spice for 2 to 3 min until smooth. Fold in 2.3 of container of Cool Whip. Chill 2 hours before serving in small 1/2 cup dishes with a spoon full of Cool Whip on top.

Deb Allan not only shared this recipe, but prepared this dish for the UIHC December 2016 Bariatric Surgery Support Group Meeting. I’m not in a big rush to reintroduce sweets and desserts to my diet, so I passed on this dish. Those who tried it seemed to enjoy it.
